     Mock Chicken Parm

Ingredients
Thin sliced chicken breast
Fresh mozzarella (between 3-6 g fat/oz.)
Fresh tomato
Fresh baby spinach - big tub
Olive Oil
Pam spray
 

Instructions
Preheat oven/broiler Pound the chicken breast (gently) Heat a grill pan on the stove with a little PAM spray and throw the chicken on. Brown both sides, I put a tiny dash of salt and pepper. Set chicken aside and measure 3.75 oz for your meal Slice 1/2 cup of tomato and lay on top of the chicken. Slice 1.5 oz of mozzarella cheese and lay on top of the tomato/chicken. Pop the chicken in the oven/broiler just long enough for the cheese to melt (keep an eye on this, it doesn't take long especially if you're under the broiler and you don't want it to dry out). Heat 1 tsp of olive oil in a wok or large fry pan and cook the spinach - I add a tiny dash of salt to the spinach once cooked. Measure out 1 cup of cooked spinach to eat on the side or you can put it on top of the chicken as well.
chicken 3.75 oz and mozzarella 1.5 oz is your Lean 1/2 cup of tomato and 1 cup of spinach is your Green 1 tsp of oil is your one Healthy fat Pam and Salt/Pepper are your condiments
