Mix bisquick and pepper. Soak chicken in egg and toss in flour.
Heat oil in skillet. Add carrots for two minutes, add pepper and onion for two more minutes.
In same skillet add more oil and cook chicken until brown outside and not pink inside. Add veggies and cook 2 minutes. Stir in pineapple and sweet and sour sauce. Cook until hot. Serve with rice.
