     Pot Roast with Red Wine Sauce

Ingredients
4 1/2lb boneless beef chuck tied
s/p
1 tsp veg oil
1 lb carrots
1 lb frozen pearl onions
3 cloves garlic pressed
1/2 tsp dried thyme
1 cup dry red wine
1 28oz can diced tomatoes
 
1 bay leaf

Instructions
Season roast with s/p. Heat oil in skillet and brown roast for 10-13 minutes. Transfer to slow cooker. Put onions,garlice and thyme in skillet and cook 2 minutes. Add wine and cook for 3 minutes scraping up brown bits on bottom. Transfer to slow cooker.
Put carrots in slow cooker. Add tomatoes and bay leaf. Cook 10 hours on low.
