     Creamy Potatoes & Peas

Ingredients
4 medium red or yukon gold potatoes
1 small pkg. frozen green peas
1/2 c. peeled pearl onion or 1/2 tsp. onion powder
3 T. butter
2 T. flour
1/2 tsp onion pwdr if not using fresh onion
salt and pepper to taste
 
1 1/2 c. whole milk

Instructions
Cut potatoes into quarters and boil until firm but soft. In same potato water, boil the peas and onion. Keep peas bright green.
WHITE SAUCE To make a standard white sauce, melt butter in saucepan. Stir in flour, whisking away all lumps. When thick, add milk a little at at time. As this sits it thickens, add more milk until desired consistency. Add salt, pepper, onion powder or your favorite seasonings.
Place cooked potatoes, peas and onions in the white sauce and gently stir until well coated. Serve warm. For those that do not like green peas - substitute frozen or canned green string beans.
Most children prefer this without onions, etc. Just creamed potatoes and peas. You can add cubes of ham, crumbled bacon and even red pepper flakes for adults.
