     Peach Brown Sugar Cake

Ingredients
3 cups cake flour
1 and 1/2 tsp baking powder
1 and 1/2 tsp baking soda
1 tsp salt
Pinch of nutmeg
1 and 1/2 sticks unsalted butter, at room temperature
3/4 cup dark brown sugar, packed
3/4 cup granulated sugar
2 large eggs, lightly beaten
 
1 tsp vanilla extract
1 and 1/2 cups buttermilk, sour cream or full-fat yogurt
3 large peaches, peeled, cored and chopped finely

Instructions
Preheat over to 350 degrees. Grease and lightly flour two 9 inch cake pans.
Sift together the four, baking powder, soda, salt and nutmeg. Set aside. Cream the butter and sugars together, beating until fluffy. Add eggs, one at a time, scraping down the sides and bottom of the bowl between each addition, and then add vanilla. Gently mix in the buttermilk, sour cream or yogurt. Stir in dry ingredient sand fold in the peaches.
Divide the batter evenly between the two pans. Bake for 25 to 27 minutes.
Frost with Brown Sugar Cream Cheese Frosting (see recipe in this book).
