Whisk vinegar, garlic and oregano in a large bowl. Gradually whisk in the oil. Add olives and peppers. Season with salt and pepper to taste.

Cut the top 1 inch off the round loaf and set aside. Hollow out the bottom and top halfs of the loaf.
|
|
|
Spread some of the olive/pepper mixture over the bottom and top of the loaf. Layer meats and cheeses, top with the onion and arugula then spread with remaining olive mixture.
|
|
|
Wrap the entire sandwich in plastic wrap tightly and refrigerate overnight.
