12 Rhodes dinner rolls, thawed to room temperature
1 pound extra lean ground beef
1 1/2 cups pizza sauce
1 teaspoon Italian seasoning
salt and pepper to taste
3/4 cup grated mozzarella cheese, divided
fresh basil, if desired
Start off by preheating your oven to 350F. Lightly spray your counter with non-stick cooking spray. Flatten each roll into a 5-inch circle. Set the circles aside to rest and cover with plastic wrap. In a skillet, brown the ground beef. Add the pizza sauce, and then the Italian seasoning.
Spray a 12-cup muffin tin with cooking spray. Evenly press each circle of dough into each muffin tin. Divide 1/2 cup of the cheese evenly between each of the 12 cups, then spoon in the ground beef mixture. Bake in the preheated oven for 20 minutes.
Remove the tin from the oven, and divide the remaining 1/4 cup cheese evenly over the 12 pizza cups. Return the pan to the oven and cook until the cheese is melted, 5-10 minutes. When done, sprinkle basil on top of the cups.
