     Penne and Roasted Squash with Walnuts

Ingredients
1 large butternut squash baked and cubed
1 lb penne pasta cooked and drained
Salt to taste
Water
1 T olive oil
1 medium onion, diced
2 sprigs fresh thyme, leaves remoced and chopped
1/4 t dried red pepper flakes
1/2 C walnut pieces
 
1/4 C white cheeese crumbled
1/4 C fresh parsley
Fresh ground black pepper to taste

Instructions
Heat the oil in large non-stick saute pan over med high heat. Add onions and saute for 4 minutes until they begin to carmelize.
Add thyme, red peper flakes and walnutes. Saute 1 minute longer. Add cooked pasta abd squash, stir.
Add cheese, parsley, salt and pepper. Toss well.
