     Chicken Cacciatore

Ingredients
1 lg can Tomato Sauce (29oz)
2 lg cans peeled tomatoes (28 oz each)
2 garlic cloves minced
celery salt & thyme & oregano to taste, salt & pepper
1 lb carrots, cut into segments
3 bell peppers, but into strips
1/2 lb sliced mushrooms (may use 2-3 cans of mushrooms
2 large onions chopped or sliced
4 chicken breast cut into bite size chunks
 

Instructions
Combine in large dutch oven (or huge pot w/lid on stove) and start heating over low heat TOMATOE SAUCE (29oz) PEELED TOMATOES (28oz each) GARLIC, MINCED (I add little more) CELERY SALT, THYME, ORAGANO to taste ADD LITTLE SALT AND PEPPER (CHICKEN STOCK OR V8 JUICE IF TOO THICK)
Cut into segments (carrots) and strips (green peppers) and add to sauce mix- 1 LB CARROTS 3 PEPPERS
In steel saucepan, heat- OLIVE OIL Slice and saute in olive oil, then add to sauce- 1/2 LB FRESH MUSHROOMS (or instead of fresh mushrooms can use 2-3 cans mushrooms)
In steel saucepan, heat then add to sauce- OLIVE OIL 2 LARGE ONIONS (CHOPPED OR SLICED) (I chop mine) In steel saucepan, heat then add to sauce- OLIVE OIL Cut into small chunks; 4 CHICKEN BREASTS (SKINLESS/BONELESS) After adding chicken, let simmer over medium heat for about 45minutes/1 hr.
Serving Suggestions
I serve over rice with a dallop of sour cream on the top. It makes a huge batch and I always freeze half for another night
