     Carrot Cake

Ingredients
2 cups sugar
2 tsp baking soda
3 tsp cinnamon
4 eggs
1 cup chopped nuts
2 cups flour
1 tsp salt
1 1/2 cups vegetable oil
3 cups grated carrots
 
1 tsp vanilla

Instructions
Sift together flour, sugar soda, salt and cinnamon. Stir in oil.
Add eggs one at a time, mixing well after each addition. Add carrots, nuts and vanilla
Mix thouroughly; pour in greased and floured 13x9 pan
Bake at 350 degrees for 30-35 minutes. Cool in pan. Spread with cream cheese icing.
Serving Suggestions
Use two eight inch pans for double round
