Ingredients
-Sponge-
2 cups flour
1 cup water
1/4 tsp yeast
-Dough-
2 1/2 cups flour
1/2 cup water
1 1/2 tsp salt
 
1/8 tsp yeast
1/4 cup wheat flour

Instructions
For sponge, mix ingredients well then cover and let sit for about 12-24 hours. Let sit longer if added more flour.
For dough, add ingredients and mix well again. After, put in a bowl and cover. Let sit for 3 hours and then deflate. Again cover and let sit for an hour and a half. No need to deflate again, and after, flatten and fold in half. When folding make sure to pinch the fold every time. Then repeat the processes once more. When you have folded the dough, pinch at the fold line once more. Then roll out to be 15 inches. Then cover and let rest for an hour to hour and a half. Bake at 425 degrees for 25 to 30 minutes or till dark golden brouwn. Spray with water every 3 minutes for 10 minutes. Then cool on cooling rack. Afterwards, serve and enjoy.
