     Mexican Wedding Cake (Cookies)

Ingredients
1 1/2 cup butter
3/4 cup powdered sugar
3 tsp vanilla extract
3 cup flour
1/4 tsp salt
1/2 cup pecans, chopped or roasted
An additional 3/4 cup powder sugar to roll
An additioinal 1/4 tsp salt
 

Instructions
Add butter, powder sugar and vanilla in mixing bowl. Mix medium-high speed until completely mixed. Separate bowl. Mix flour and salt. Mix the flour into butter about 1/2 cup at a time. Fold in nuts.
Take small amount of dough and roll into one inch ball. Place balls on a lightly greased cookie sheet, 2 inches apart.
Bake 350 degrees about 15 minutes. Mix additional powder sugar and salt. Roll the warm dookies in the powder sugar/salt mixture.
