2 T oil
2 lb bonless skinless chicken
1 lb smoked italian sausage
2 onions chopped
5 cloves garlic minced
3 stalks celery
1 1/2 tsp thyme
1 1/2 tsp paprika
1 tp salt
1/2 tsp allspice
1/2 tsp pepper
1/2 tp cayenne pepper
3 c chopped peppers (red & green)
1 large can tomato crush or chopped diced
2 1/2 c chicken stock
2 1/4 c rice
1 pound shrimp
3/4 c chopped green onion 1/2 chopped parsely for garnish

Brown chicken in oil & remove Add to pot sausage onion garlic celery thyme paprika salt allspice black & red pepper. cook stiring often for 5 min. Add peppers and tomato. Add chicken stock. Stir in rice. bring to a boil. Put into dutch oven and covr=er. Bake 30min at 350
Stir in shrimp green onion and parsely. Bake for another 5 to 8 min. This is nice and spicey but if serving to children might want to cut back or make into 2 different batches
