Heat grill to medium heat. Season the steak with greek seasoning. Grill to desired doneness, 4-5 minutes per side for medium rare. Let cool, then slide in long, thin strips.
Meanwhile, brush vegetables with 2 tablespoons olive oil. Season with greek seasoning. Grill until tender.
In small pitcher, combine the rest of the oil, vinegar, garlic and cilantro.
Divide the steak and vegetables among individual plates and spoon the sauce over the meat and vegetables.
