     Paglia e Fieno {Straw and Hay Pasta}

1/2 pound linguine
1/2 pound basil linguine
3 tablespoons unsalted butter
6 slices pancetta cubed
1/2 cup heavy whipping cream
2/3 cup Parmigiano Reggiano grated

Place a large pot of generously salted water onto boil. When boiling, add pasta and cook until al dente. Reserve 1/2 cup pasta water. Drain.
WHILE pasta is cooking, place a large saute pan over medium heat. Add butter and melt. Add pancetta and cook until crispy. Remove pancetta with a slotted spoon and transfer to a plate lined with kitchen towels. Set aside. Reduce heat to low. To the pan add- cream, cheese. Stir to combine. Add pasta, and crispy pancetta. Toss to combine. If too thick, add a few tablespoons of reserved pasta water to loosen.
Garnish with additional Parmigiano Reggiano if desired. Serve immediately.
