     Rhubarb Muffins

Ingredients
1 1/4 cup brown sugar
1 egg
1/2 cup oil
2 tsp vanilla
1 cup buttermilk
2 cups rhubarb
2 1/2 cups flour
1 tsp soda
1/2 tsp salt
 
1 tsp baking powder
Topping
1/2 cup sugar
1 1/2 tsp cinnamon
1/2 Tbsp margarine
Instructions
Mix all ingredients, add topping, and bake at 350 for 15-20 min.
