     Steak and Cheese Soup

Ingredients
1 1/2 c. cauliflower (3 Green Options)
1 1/4 c. water
1 low-sodium chicken bullion cube (1 Condiment Option)
1 oz. Velveeta 2% cheese (1/4 Lean Option)
4 oz. cooked lean steak, cubed (3/4 Lean Option)
 

Instructions
Put the cauliflower, water, and bullion cube in a pot. Cook for 20-25 minutes, or until the cauliflower is very tender. Using a blender (either a stick blender or a regular one), puree the mixture until smooth. Add the cheese and steak and stir until the cheese is melted.
Serving Suggestions
3 Green Options, 1 Lean option, 1 Condiment.
