     Angel Food Supreme

Ingredients
1 1/2 cups edd whites (~12 eggs)
1 cup cake flour
1 1/2 cups plus 2 tbsp sugar divided
1 1/2 tsp cream of tartar
2 tsp vanilla extract
1/4 tsp salt
 

Instructions
Place egg whites ina large mixing bowl and let stand at room temperature for 30 minutes. Sift Cade flour and 3/4 cup plus 2 tbsp sugar together twice; set aside.
Bead egg whites with cream of tartar, extracts, and salt on medium speed until soft peaks form. Gradually add remaining sugar, 2 tbsp at a time beating on high until stiff peaks form and sugar is dissolved. Gradually fold in flour mixture, a fourth at a time.
Gently spoon into an ungreased 10 in. tube pan. Cut through the batter with a knife to remove air pockets. Bake on the lowest rake at 375 degrees for 30-35 minutes or until top springs back when lightly touched and cracks feel dry.
Immediately invert baking pan; cool completely. Run knife around sides and center tube of pan. Invert cake onto serving plate.
