     Banana Nut Bread

Ingredients
2 cup sifted all purpose flour
1 tsp soda
1 tsp salt
1/2 cup chopped nuts
1/2 cup hydrogenated shortening
3/4 cup sugar
2 cup ripe bananas mashed
2 eggs
 

Instructions
For best results use bananas with peels that are entirely brown. Preheat oven to 350 degrees. Use 9 1/2 X 5 1/4 X 2 3/4 inch metal pan. Cut waxed paper to fit bottom of pan. Be sure it lies flat and does not wrinkle at sides. Grease top of paper and place in pan. Do not grease sides of pan.
Sift flour, then measure. Add soda and salt to flour and sift together. Mix nuts into flour. Set aside. Stir shortening to soften. Add sugar and cream together. Beat eggs until foamy and add eggs and bananas to shortening and sugar mixture. Add flour and pour batter into pan. Bake in 350 degree oven for about 1 hour and 10 minutes.
