     Banana Coffee Cake

Ingredients
1/2 cup butter, softened
3/8 cup sugar
2 eggs
3/4 cup ripe mashed banana (3 medium bananas)
1-1/4 cup sifted flour
3/4 teaspoon baking soda
1/2 teaspoon salt
Frosting made with 2 Tablespoons softened butter
or cream cheese, 1 cup powdered sugar, a pinch of salt,
 
1/2 teaspoon vanilla, and enough milk to make it spreadable.

Instructions
Cream butter and sugar until light and fluffy. Beat in each egg separately.
Mash bananas with potato masher and add to mixture. Blend well.
Add sifted flour, baking soda and salt. Mix thoroughly but don't over beat.
Pour into 9 x 9 x 2-inch pan that has been buttered and dusted with flour. Bake at 350 degrees for 30 minutes or until done. Frost when cool with powdered sugar frosting. (Beat together butter or cream cheese, powdered sugar, a pinch of salt, vanilla, and just a small amount of milk. Add the milk a little at a time because you want the frosting to be stiff initially so that you can beat out any lumps in the powdered sugar. Then add a little more milk so that it spreads easily.) Enjoy!
