     Current Jelly Muffins

2 cups sifted all purpose flour
2 tbsp sugar
2 tsp baking powder
1 tsp salt
1 egg beaten
1 cup milk
1/4 cup butter melted and cooled
Jelly (any kind)

Preheat oven to 400 degrees. Grease muffin pans. Sift flour, sugar, baking powder, and salt into a medium size bowl. Make a well in center of dry ingreients. Combine egg, milk and melted butter in a small bowl. Add all at once to four mixture. Stir lightly, just until liquid is absorbed. Batter will be lumpy. Spoon part of batter into cups. Add a dab of jelly. Top with reaining batter. Bake in a preheated oven for 25 minutes or until golden brown.
