     Palak Aloo

Ingredients
One large onion
one teaspoon cumin seeds
half cup of oil
half teaspoon red crushed pepper
one bag of chopped frozen spinach
1 large potato
salt
 

Instructions
Slice onions and fry in the oil with the cumin seed. When the onion is brown, add the spinach, salt and red pepper. Fry for about 15 minutes (after the spinach melts).
Chop potato (cubes) and add in the spinach. Fry everything for another 10 minutes. Add half a cup of water (or enough water to slightly submerge the potato cubes into the mixture) and lower the fire to the lowest level. Let it simmer for another 20 minutes.
Serve with basmati rice or pita bread.
