To cook quinoa- rinse quinoa well. Measure 3 cups water in pot add 1 cup quinoa bring to boil, turning heat down but continuing to slow boil for 12 minutes until tender. There should be no water left in the pot.
Cook quinoa and chill. In separate bowl mix tomatoes, green onions, cucumber & pecans. Fold into quinoa (in pot is fine).
Squeeze lemon over it to taste adding salt and peper to taste as well. Serve in chilled bowl.
