     STROUFFLES

Ingredients
8 3/4 cups flour
2 tbs salt
raisins
3 eggs
3/4 cup sugar
2 cubes of yeast
1 1/2 sticks butter
3 cups WARM water
 

Instructions
Preheat oven to warm and then shut off. Dissolve COMPLETELY yeast in WARM water. Add 3 eggs blending completely. Add butter and blend. Add sugar and blend. Add raisins.
Mix flour and salt together and add slowly to mixture. The batter will turn to dough, at this point mix with hands. If dough is to sticky add a little bit more flour until dough is managable.
Place in a huge greased bowl, spray the top of the dough lightly with cooking spray. Cover with plastic wrap. Place in oven and let it rise.
Once it has risen, take out of oven and punch down, kneeding it really well. Place back in oven, covering it and let it rise. Once it has risen again, take out of oven, kneed and you are ready to fry. Place in fryer with hot oil, pinch off dough, roll with hands and drop in oil. let it cook on one side then flip until both sides are brown, take out and drain on paper towels.
