     Broccoli Garlic Salad

6-7 cups broccoli, bite sized florets and peeled stems
3 heads garlic
1 T olive oil
2 T soy sauce

Peel stems, seperate florets, and cut into bite sized pieces. Boil 5 minutes and immediately put in a colander under cold running water to stop the cooking. Chill.
Seperate the heads of garlic into cloves and cut the larger ones into halves. Add olive oil and put into shallow baking dish. Put into 400 degree oven and roast. Check occasionally and stir. When they begin to brown, they're done.
Combine garlic and broccoli and stir in soy sauce. Chill.
Serving Suggestions
Great as a side with soup or sandwich.
