     Lemon Beef - pot roast

Ingredients
4 c water or to cover meat 1/2 way
1-2 kl beef 2-4 lbs
2 c celery chopped
2 md onions chopped
1 t salt
1/4 t pepper
2 T oil
2 garlic cloves chopped
4 T lemon juice or more (taste)
 
1 cup chopped parsley add the last 15 minutes
(may add 1/2 cup chopped cilantro (coosbara)
Instructions
Put all ingredients in pot. Bring to boil, then reduce heat to low, cover and cook for 1 hour or until meat is tender.
The original recipe cooks the rice in the meat broth.
