Place veggies in 2 and 1/2 qt baking dish (8x8). Mix oil and vinegar with salad dressing mix. Pour over veggies. Sprinkle with cheese and bake, uncovered, for 40 minutes at 350 degrees.
Veggies should still be firm, but not squishy.
