     Beef and Broccoli Skillet Casserole

Ingredients
1 lb eye of round steak or roast with all visible fat removed, cut into 1/2-inch cubes
1 lb bag frozen broccoli florets, cut into 1-inch pieces
3 cups hot water
1 envelope onion soup mix, dry
3 cups instant rice
3/4 cup fat-free French salad dressing
 

Instructions
In a large nonstick skillet cook the beef on high for 3 to 4 minutes or until the bottom is cooked.
Turn the beef over and pour the broccoli, water and onion soup mix over the beef. Stir until the soup mix is dissolved. Cover and cook on high for 6 minutes.
Add the rice and stir until the rice is covered with the liquid. Turn off the heat, cover, and let it sit for 5 minutes.
Stir in the dressing. Serve immediately.
