     Carrot Cake

2 cups sugar
3 tsp cinnamon (fresh)
2 tsp. Baking soda
1 tsp. Salt
2 cups unbleached wheat flour
4 eggs
1 1/2 cup oil
2 Tbs. vanilla
3 cups grated carrots
Carrot juice (from grating carrots)

Combine sugar, cinnamon, baking soda, salt and flour slowly on low with mixer. In separate bowl combine eggs, oil and vanilla. Fold in carrots and carrot juice.
Combine the two mixtures slowly with wooden spoon. Do not over mix.
Grease and Flour 3 round pans. Divide batter into the pans and bake for 1 hr at 300 degrees.
Let cool completely. Level and stack. Icing recipe listed separately
