     Chicken-fried Steak

Ingredients
4 - 8 ounce pieces of marbled beef
3 cups all purpose flour
Buttrub
1 1/2 cup buttermilk
Oil for frying
Salt
Pepper
Cream Gravy-
 
Reserved pan drippings
2 tablespoons flour
1 cup finely chopped onion
1/4 cup finely chopped green onion
1/4 cup finely chopped poblano pepper, seeds removed.
1 teaspoon salt
Pepper to taste
2 cups milk
1/2 cup chicken stock

Instructions
Tenderize each cut of meat until about 1/8 inch thick. In large zip lock baggie combine flour, salt, pepper and Buttrub.
Combine Buttermilk and Buttrub. Put steaks in flour bag, close and shake until coated. Remove and drench in buttermilk mixture. Return to ziplock baggie and repeat step one until well coated. Remove and place on wire racks until ready to cook.
Carefully pour out most hot oil from skillet in which you cooked beef and oysters, leaving as many crumbly bits as possible on bottom of pan. Add flour to skillet and cook over medium-high heat, stirring with crumbly bits and oil remaining in pan, 3 to 4 minutes. Add onion, green onions, salt, pepper and Buttrub and saute until vegetables are tender, 4 to 5 minutes. Whisk in milk and stock little by little, until thoroughly combined. Cook until sauce is smooth and thickened
