     Bermudian Codfish Breakfast

Ingredients
salted codfish - 1 bag - 4 fillets
red potatoes - skinned - 4
avacados - riped - 3
bananas - 2 medium
onions - 1 large
butter - 4 tbsp
coriander powder - 1 tsp
pepper- to taste
fresh thyme - to taste
 
portuguese spice

Instructions
Soak codfish the overnight for 12 hours, then drain and rinse and boil with peeled and pototes that are cut in half
Butter/onion sauce - chop onions and add to melted butter (4 -6 tsbp) until transparent add spices for light taste
plate fish, potatoes and top with butter sauce, sliced fresh avacados on side with quartered banana. Enjoy - add mayonnaise if your a true bermudian (my wife will never do that one!)
