     Apricot Honey Glazed Carrots

Ingredients
1 cup Apricot KERNS® from LIBBY'S Refrigerated All Nectar
1 tablespoon honey
1 tablespoon butter or margarine
1/4 teaspoon salt
1 1/2 teaspoons cornstarch
1 pound baby carrots
 

Instructions
Combine nectar and cornstarch in small bowl; mix until smooth.
Cook carrots in boiling water for 10 minutes or until crisp-tender; drain.
Return to pan and add honey, butter and salt. Add nectar mixture and cook over low heat for 5 minutes or until apricot glaze is thickened.
Serving Suggestions
Serve with any of your favorite entrées for a simple yet sophisticated accent.
