In a large pot, heat the bacon grease over medium to high heat. Add the onions, celery, and bell pepper to the grease. Season with salt, pepper and cayenne. Cook and stir until the vegetables are soft. Add bay leaves and sausage and cook for 4 minutes. Add the garlic and cook for 1 minute. Add the beans and chicken stock and stir occasionally until the beans are tender and starting to thicken, about 2 hours. Add water if beans become dry. Remove from the heat, remove the bay leaves, and stir in one stick of margarine. Serve over rice.
