     Katy's Minestrone

Ingredients
1 medium onion, chopped
2 tsp. jarred garlic (or 2 cloves fresh0
3-4 Tbl. olive oil
56-ounce (4-14 ounce cans) stewed or whole tomatoes
14-ounce can corn
14-ounce can cut green beans
14-ounce kidney beans
1 cup elbow macaroni
3 1/2 - 4 cups water
 
2 crushed beef bouillon (or use beef broth instead of water above)
2 sliced zucchini
2 cups shredded cabbage
3 thinly sliced celery stalks

Instructions
Saute onion and garlic in olive oil over medium heat for 8-10 minutes. Add remaining ingredients to the pot stirring to break up the tomatoes. Bring to a boil and add a bay leaf.
Reduce heat to low and simmer until tender or ready to eat. Top with Parmesan cheese.
