     Peanut Brittle

Ingredients
2 cups white sugar
1 cup corn syrup (regular golden)
1 cup water
2 cups unsalted peanuts
1/2 cup butter
1 1/2 tsp baking soda
1 1/2 tsp vanilla
Dash of salt
 

Instructions
In a heavy saucepan, put the sugar, water, syrup and salt. Boil until it spins a threat, approximately 290 degrees on the candy thermometer. Be sure not to have the heat too high or cook too long, as this causes the mixture to brown.
Add the peanuts and cook to 300 degrees, stirring frequently. Remove from burner and add the butter, vanilla and baking soda. Pour out on a cold, buttered cookie sheet. Allow brittle to cool and break into pieces.
