Preheat oven to 250 degrees. Line a 9x13 pan with foil,letting edges hang over. Lightly oil. Pour dark choc chips evenly into pan. Put in oven for 5 min or until almost melted. Remove from oven and spread evenly with knife till smooth. Put in fridge till cold and firm. About 20 min. Make this layer a bit ahead as you will need to remove from fridge to warm slightly so next layer will adhere better.
In a double boiler or microwave melt white choc chips(if using microwave,melt for 30-40 sec at a time, stirring in between. When almost melted add peppermint extract. Stir till smooth. Pour over dark choc layer. Work quickly to smooth over bottom layer. Sprinkle with crushed candy canes. Cover and chill. When firm cut or break into pieces. Enjoy!
