Ingredients
1 Cup whipping cream(or coconut cream)
10 ounces chocolate
any flavoring desired
10 ounces any melting chocolate
shortening
any toppings desired
 

Instructions
Bring cream(or coconut milk) to boil, then add chocolate. Stir until melted. Add any flavoring desired. Refrigerate for several hours until ganache is set. Working quickly, scoop small balls of ganache onto wax paper lined cookie sheet.
Freeze balls for several hours. Melt chocolate, adding small amounts of shortening, if needed to thin chocolate out. Using fork, dip frozen balls into melted chocolate. Carefully place back on cookie sheet and immediately add topping(ie. coconut, cocoa, crushed candy canes).
If at anytime balls become too soft to work with, place back in freezer for 30 minutes.
