     Chicken Stuffed with Mango and Brie

Ingredients
55g x Brie - Cut into thick slices
1 x Mango - sliced
1 x Chicken Breast Sliced
2 x Slices Proscuitto
2 x Tablespoons Olive Oil
1 x Small Red Onion - chopped
125ml x Mango and Apple Juice
125ml x White Wine
2 x Tablespoons Double Cream
 

Instructions
Preheat oven to 190c
Sandwich a slice of Brie between two of the mango slices. Make a deep slit in the side of the chicken breast and fill it with the mango and Brie 'sandwich' Wrap the chicken breast in the prosciutto.
Heat one tablespoon of the oil in a frying pan over a medium Heat Add the wrapped chicken and fry for 3-4 minutes each side, or until the prosciutto is crisp and the chicken has started to turn golden-brown. Transfer the wrapped chicken to an ovenproof dish, cover with a lid Continue to cook in the oven for 10-12 minutes, or until the chicken is cooked through
Sauce- Heat the remaining tablespoon of the oil in the same frying pan Add the onions and fry for 3-4 minutes, or until softened. Add the mango and apple juice and the wine and simmer for 5-6 minutes, or until the volume of liquid has reduced by a third. Stir in the double cream and heat through for 2-3 minutes.
