3/4 C. Milk, Soy Milk, or other Lactose-Free Milk Substitute
1 Tablespoon Vinegar or Lemon Juice
1 Cup Flour
1 Tablespoon Sugar
1 Tablespoon Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1 Egg, or 1 Tablespoon whole or ground chia seeds soaked in 3 Tablespoons water
2 T. Butter, melted or Oil
1 teaspoon Vanilla
Combine the Milk and Vinegar or Lemon Juice. Set aside and allow to curdle for at least 5
minutes. You can also do this overnight, or substitute 1 Cup of Buttermilk and omit the
Vinegar or Lemon Juice.
Combine all of the dry ingredients. Add all of the wet ingredients and mix until just
incorporated. The batter should be lumpy! Allow the batter to sit for 5-10 minutes.
Heat an oiled pan or griddle over medium heat. Add 1/4 Cup of batter and cook until
bubbling subsides and the edges are dry. Flip and cook until golden brown.
