     Tofu Coconut Curry

Ingredients
1-2 Tablespoons Olive Oil
1 Package Extra Firm Tofu, cut into 1-inch cubes
1 Bell Pepper, cut into strips
1/2 Yellow Onion, sliced or diced
4-5 Cloves of Garlic, minced or pressed
1-1 Inch of Fresh Ginger, minched or grated
2 Tablespoons Curry Powder or Paste
1-2 Scallions, chopped (optional)
1-15.5 oz Can Coconut Milk
 
1 teaspoon Vanilla
Additional Veggies- bamboo shoots, green beans, water chestnuts, etc.
1 Tablespoon Brown Sugar (optional)
Fresh Thai or Italian Basil (optional)

Instructions
Press as much water out of the tofu before cubing by pressing it between multiple layers of paper towel before cubing. Heat 1/2 of oil over medium-high heat and add tofu. Brown on four sides and set aside.
Add peppers and onions to pan and cook until soft, about 5 minutes. Add garlic, ginger, curry powder, and scallions, and cook for 1 minute stirring continuously until aromatic.
Add coconut milk, tofu, vanilla, brown sugar,basil and additional veggies. Simmer 5-10 minutes. Serve over rice or lentils.
Serving Suggestions
I like using a mixture of curries, red, green, and yellow.
