     Pulled braised pork / BBQ sauce

Ingredients
1.75 kg pork with layer of fat (2-3 people)
Spices for pork rub- salt, steak seasoning
2 onions
8 cloves garlic
2 tbsp tomato paste
2 tbsp ground corriander
1 tbsp black pepper
4 dried chilli's (or chilli powder)
1 tsp garlic powder
 
1 tsp mustard powder
4 bay leaves
3 tbsp worcestershire sauce
2 tbsp brown sugar
1/2 cup red wine vinegar
1/2 cup tomato sauce
1 tbsp soy sauce
3/4 cup BBQ sauce
Enough water to make sauce cover pork in roasting pan

Instructions
Rub spices on pork and brown- place in roast pan. Soften onion and garlic in same pan, add tomato paste. Combine all spices in small blender, add worcestershire sauce.
Mix brown sugar and vinegar. Add spices, sugar and vinegar, tomato sauce, BBQ sauce, soy sauce and water to onion mixture.
Simmer sauce for 3 mins and pour over pork until all covered in sauce, cover pork with foil and lid. Cook in oven at 275 / 300 F. for 3 1/2 to 4 hours turning occasionally.
Rest pork. Strain juices and skim off excess fat. Heat sauce in pan and reduce slightly. Serve pulled pork with corn on cob, coleslaw, vegies... Or in a bun!!
