     Cauliflower Cheese Pie

Ingredients
Potato Crust
butter for greasing the pan
2 c grated raw potato
1/4 c grated raw onion
1 egg lightly beaten
1 tsp salt
1 T flour
olive oil for brushing
Filling
 
1 T olive oil
1 lg onion thinly sliced
2 cloves garlic finely chopped
salt and pepper to taste
1 tsp each dried basil and thyme
1 med cauliflower coarsly chopped
1 c grated cheese
2 eggs
1/4 cup milk and paprika to decorate

Instructions
Potato crust. Set oven to 400 and greqase a shallow 9 inch baking pan. I have used a pie plate. Combine grated potato onion egg salt and the flour.Place in the buttered dish and pat down. Bake for 30 min. brush the crust with a little olive oil and return to the oven and continue to bake 10 more min.
Turn oven temp to 350. Filling. Heat olive oil in a pan ontill it is hot then add onion garlic salt pepper basil and thyme. Saute over med heat for about 8 min. Stir in the cauliflower and cook for 5 more min.
Spread 1/2 of the cheese on top of the potato crustSpoon the sauted veggies into the crust and top with remaining cheese. Beat together egg and milk and pour this over the veggies. Sprinkle with paprika. Bake for 35 min or until the custard is set and the top is brown.
Serve with homemade chili sauce and a nice salad.
