2 lb acorn squash, halved, seeded, and sliced 3/4'' thick
2 tbsp olive oil
8 sprigs fresh thyme
¼ c parmesan, grated
salt and pepper
Instructions
Heat oven to 400°. Line a cookie sheet with parchment paper. On baking sheet toss squash with oil, thyme, salt and pepper. Sprinkle on Parmesan. Bake 25-30 min.
