1 pound flour
|

1 pound butter
|

1 pound sugar

9-10 eggs

2 pounds mixed fruit soaked in brandy or wine

2 pounds black currants
|
|
2 tbspn golden syrup
|
|
1 cup sugar
|
|
Spice powder (ground cinnamon, nutmeg, dried ginger, cardamom and cloves)

Instructions |
|
|
Preheat oven to 300 degrees Fahrenheit.
Melt 1 cup of sugar with 3/4th cup of water and set
aside.

Beat sugar powder, with butter. Add eggs one at a
time. Add the melted (burnt) sugar mixed with the
golden syrup and spice powder.

|
Lightly add flour and fold in fruit. Add some
brandy or wine to the batter.
|
|
|
Bake for 1 to 1.5 hours. Keep a pan of water under
the pan with baking to preserve the moisture of the
cake.
