     Baked Meatballs

Ingredients
3/4lb Ground Beef (lean; 93/7 works)
3/4lb Ground Pork
5 ounces chopped frozen spinach
1/2 cup of grated Parmesean
1 egg
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon red pepper flakes
Black pepper (to taste)
 
1/2 cup of bread crumbs (divided)

Instructions
Preheat oven to 400 degrees. Combine all ingredients, save 1/4 cup of bread crumbs, in a large mixing bowl.
Roll mixture into roughly 1.5 ounce balls. They will be between 1.5-2 inches in diameter. Roll each ball in the remaining breadcrumbs so that they are evenly coated. Add a small amount of water (enough to cover the bottom) to each cup in a mini muffin tin. Set the meatballs into the tin; they should sit snuggly on top.
Bake the balls for 20 minutes. Remove and serve with pasta, but don't douse them in sauce; they don't fucking need it.
