     Cinnamon Noodle Pudding

Ingredients
2 C. medium wide noodels (about 5 oz.)
2 T. olive oil
4 large eggs
1 C. part-skim ricotta cheese
1 C. low-fat plain Greek yogurt
1/3 C. sugar
1/2 t. cinnamon
1/3 C. golden raisins
 

Instructions
Heat oven to 350. Coat an 8x8 baking dish with cooking spray. Cook noodles according to directions, drain and toss with olive oil.
In large bowl, whisk eggs, cheese, yogurt, sugar and cinnamon with wooden spoon.
Stir in drained noodles and raisins. Spoon into baking dish.
Bake 45 minutes or until mixture is set in center and lightly browned. Cool before serving.
