     Italian Beef

Ingredients
1 rump roast (5-7 lbs.)
1-2 C Water
1-2 beef boullion cubes
1 tsp marjoram
1 tsp thyme
1 tsp oregano
1/2 tsp hot sauce
2 Tbsp worchestershire sauce
2 clove garlic minced
 
1-2 green pepper, sliced
salt and pepper

Instructions
Roast meat till medium well done; remove from dippings; cool.
Slice thin. Add water and bouillon to pan drippings, then add remaining ingredients. Simme 15 minutes. Add sliced beef and marinate 4-5 hours or overnight.
To serve- Simmer till heated through. Broth makes good gravy or soup stock.
Carolyn often increased the number of green peppers to 4-5 sliced or quartered. They were great on Italian Beef sandwiches.
