For crust combine flours, salt, and brown sugar. Mix in butter with hands. Add water 1 tbsp at a time and mix. Form into 2 discs and wrap in plastic. Refrigerate at least 1 hour. Preheat oven to 375°. For filling combine sugar, flour and spices. Use hands to mix in apples. Add brandy and vanilla. Remove dough from fridge and allow to sit at room temp. 5-10 min. Roll out bottom crust (12'', 1/8'' thick). Spoon in apple filling. Roll out second dough and seal edges. Stir egg yolk and cream together and brush on top of pie. Cut air vents in crust and bake on baking sheet 20 min. Reduce oven to 350° Cover edges of pie and continue baking 30-45-min.
