Fill sink with cold water and place meat in a ziplock bag. Leave in sink 45 min. On side of meat should still be partially frozen. Place on cutting board (frozen side down) and slice very thin but not shaved using a rubber kitchen glove to hold onto meat. Combine ingred. and mix with meat in a ziplock bag. Marinate overnight or longer. Dehydrate at 165° about 4 hours. Keep stored in fridge when at home.
