     Omelet Muffins

Ingredients
6 eggs
¼-½ c cooked bacon, ham, or sausage cut into small pieces
½ c diced vegetables
¼ tsp salt
1/8 tsp pepper
1/8 c mayo
1/8 c water
 

Instructions
Preheat oven to 350°. Butter 6 muffin cups. Beat eggs and add meat, vegetables, and salt and pepper. Spoon into muffin cups. Bake 18-20 min. or until knife inserted comes out clean.
